Sweet Potato Pie

Sweet potato pie is like music to my ears. Brian never had sweet potato pie so I needed to make him one. He’s had sweet potato fries, mashed sweet potatoes, but never a pie!

Like much of my family dinner menu, this pie is a family tradition in my house. In the time leading up to Thanksgiving, my family makes me bake sweet potato pies for days. I can’t tell you how many of these pies I’ve made in my life. My siblings call me up every November asking for sweet potato pies. And those are to take home after our family dinner. I still need to bake pies for the dinner itself!

But I love making them. It gives us a chance to pause from our busy lives and just hangout as a family. I love cooking good food for the important people in my life. Last year, I baked five pies for our dinner and in a matter of minutes, they were demolished.

Making a Sweet Potato Pie

This pie is pretty easy to make and does not require a lot of time. More importantly, it’s delicious! Because I’m used to baking pies in bulk, the recipe below yields three thicker pies or four if you don’t mind a thinner filling.

One thing you’ll notice about these pies is the crust. I don’t make my own crust. I don’t even use the rollout kind. A pre-formed, deep dish pie crust is the way to go.

Brian loves my pie. His take is my pie is sweeter and thicker than his pumpkin pie. He thinks his pie is spicier and creamier in texture. I was skeptical of him putting cool whip on the slice, but it’s actually pretty good (I’m not sure I would continue doing it, but it’s alright). Here is a recipe that will be sure to make everyone wanting more…

Fatima's Sweet Potato Pie

Prep Time: 30 minutes Cooking Time: 1 hour 30 minutes Total Time: 2 hours

Ingredients

  • Pie Filling
  • 7 small-medium, sweet potatoes (yields 4.5 cups)
  • 1/2 cups of sugar
  • 1/2 cup brown sugar
  • 1 1/2 tsp nutmeg
  • 2 tsp cinnamon
  • 1/4 tsp vanilla
  • 1 1/2 cup butter, melted
  • 1/3 cup half and half
  • 3 eggs, beaten
  • Whipped Cream
  • 1 cup heavy whipping cream
  • 2 tbsp sugar

Instructions

Pie Filling

Boil potatoes until soft.

Peel potato and mix on medium speed until all lumps are gone.

In your pie dish lay out your crust.

In your potato mixture, add sugars, spices, vanilla, butter, and half and half. Mix until smooth. Add additional spices and sugars as desired.

Add beaten eggs and combine.

Pour the pie filling equally into the 3 pie crusts.

Bake for 1-1.5 hrs on 350 degrees F or until knife comes out clean from the center of the pie.

Take out the pie and let cool before serving.

Whipped Cream

Whip the heavy whipping cream on high until thick.

Add the sugar and continue whipping until firmer consistency.

Add a dollop on top of your pie!
