Want a great home-cooked meal? Comfort food?
This weekend, the very talented chef, Fatima S., made a delicious dinner for two. Fried Chicken, Mac and Cheese, and home-made biscuits topped off the night. If I had any room left in my tummy, I would have had a serving of some fresh broccoli.
- Really easy to make! Raw chicken cutlets, dipped in some egg, rolled in bread crumbs, and fried in a pan!
Mac and Cheese
- Boil water. Add some elbows (the pasta not the joint). Once done cooking, strain the water out, and add some shredded cheese to the hot bowl of elbows and stir in the cheese, allowing it to melt. (For baked mac and cheese, find a great recipe*). I garnished my mac and cheese with some cut up grape tomatoes.

- Taken right from the Bisquick box. I cut the ingredients in half to make 4 rolls, but here is the recipe in full (makes 8).
- Preheat the oven to 450 degrees (F). Stir together 2 and a 1/4 cups of Bisquick mix and 2/3 cup of milk. Knead the dough ten times. (Did not really know how to do this, so I just squished it around). Roll out the dough over a surface sprinkled with Bisquick mix to about 1/2 inch thick (I used wax paper for easy clean-up). Cut out some pieces, stick them on a pan, and bake for about 10 mins (or until golden brown).
It took about 30 minutes to cook all of the food. A quick, home made meal that will surely have your full after a long hot, summer day.
***For my wine lovers, a great Merlot would be the best choice of the reds to be paired with chicken.***
