Banana Oatmeal Choc. Chip Pancakes

Brunch?  Next time you make pancakes (boxed or from scratch) try adding in some oatmeal.  Yes, oatmeal.  Some people’s faces cringe when I tell them I put oatmeal in pancakes or waffles, like my family.  One time, I added in oatmeal, served up a delicious brunch, and told them oatmeal was a secret ingredient after their plates were licked clean – never tasted a thing!

If you’re adding in oatmeal to pancake or waffle mix, you want to add about a cup to a cup and half for every batch.  So if your box says it makes 8 pancakes, add in a cup of oatmeal.  If you are doubling your recipe, obviously double the oatmeal.

Want to add banana?  This would give it a banana taste, so if your guests hate banana-flavored food, I do not recommend adding it into the pancakes (unlike the tasteless oatmeal above)…unless you know you and your guests love banana.  We mashed up a cup of bananas, and then added sliced bananas on top for presentation (trying to take away from the fact it was served on a paper plate)!

Last ingredient: Chocolate Chips, and who doesn’t like a little bit of chocolate in their pancakes!?
